Melanie Foster presented her poster “Use of an Extended One-Generation Reproductive Toxicity Study to Evaluate a Natural Colorant, Gardenia Blue, in Sprague Dawley Rats” at the 2023 European Teratology Society meeting. The poster, based on a paper she co-authored in the Regulatory Toxicology and Pharmacology journal, explores the potential reproductive and developmental toxicity of gardenia blue natural food coloring. Natural food colorants are used with increasing frequency, replacing synthetic colorants; however, extensive safety assessment must be performed to receive global approval for use of these in food products.
